Vinification and aging: All the grapes are harvested by hand and the bunches are selected with care. A part is de-stemmed by hand and another left in whole clusters and placed in tubs for vinification. Spontaneous alcoholic fermentation. Maceration time depending on the year. Spontaneous malolactic fermentation. The wine is aged in small and large oak barrels.
